Nutty banana cookies
Finally I have stumbled upon a healthy cookie recipe that actually works - meaning that these cookies actually taste like cookies without the need to sweeten them with anything but bananas. I have tried and tested variations using coconut flour and almond flour, nuts, and sweetening the batter with apple puree and even stevia. But I've never tried the obvious sweetener - the sweetest of all fruits, the banana!
This recipe makes 12 cookies. You'll need:
2-3 ripe bananas (180-200 gms)
1/2 cup of almond butter (120 gms)
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon baking powder
Big handful of raw cacao nibs
1/2 cups almonds (crushed) (50 gms)
Instructions
Preheat oven to 350 degrees F (177 degrees C ). Add the bananas, almond butter, egg, and vanilla extract and blend until becomes a smooth batter. Add nutmeg, cloves, baking powder, cacao nibs and crushed nuts and mix again. Scoop the batter with a spoon onto a baking tray lined with parchment paper (making sure you leave enough space between each one for them to spread). Bake for 10-12 minutes or until golden brown on the bottom. Remove from the oven and let cool.
