When cake is great (for breakfast..)
This was my twelve year old's breakfast this morning: an iced carrot cake.
Of course this wasn't just any old cup cake. (You know me). Because if it was, you know that I would probably implode at even the thought of my daughter eating a cup cake for breakfast.
So what is it?
Firstly, she made it and she quite rightly wants me to show off her culinary skills here.
It's also grain-free, gluten-free, dairy-free and sugar-free. The cake is made with carrots, almond flour, eggs, cinnamon, pecans, with a dollop of apple puree to sweeten the batter. The icing is a mixture of coconut milk and tapioca flour, and sweetened with a few drops of stevia.
It's quite gratifying to watch her enjoying an iced cake that's actually good for her. Not every morning. But today? Why not.
